Wow, that game have BIG files.
I can see the problem is that it have files larger than 4gb, therefore, can't be split with this method. Sometimes the games executables (eboot in yours) could load extracted content from big files. To install your game, you have two options:
1. Keep insisting with PKG linker. I have done it as well, but no luck yet. Always give me an error.
2. Check how to manage that game files. In most cases, it will be enough to extract the big file and the game will recognize them there. Is just a matter of try and find research about mods.

just use pkg linker which is easier and faster
PKG Linker is a nice tool, but for some of us it does not work. Thus, the cable configuration is kinda tedious; I use my laptop to work and can't have it all day connected to the PS3.
Split files have worked for me this far.

OK but let me clarify something Pkg linker works 100% unless something is wrong with your hardware. For example your ps3 ethernet port is broken

Facing many problems in PKG linker V1 and V2 I am trying it for a week to make it work but no luck [emoji27] that's why I wanted to try this method out oh well

Try what I told you.
It worked for me in many PC games. Not sure how PS3 games handle files, tho.

The extract option does not produce a PKG so Don't know what to do

No, by extracting the CPK file you will be able to split its content in several folders and then, create a PKG per folder.
I do not have that game so my help is limited, but doing a small Google search, it seems that the tools to do this are easy to find. Read here.
If you are lucky enough, Persona 5 developers leave behind some code in the EBOOT file or any other file that will search for the game content in the extracted files instead of the packaged ps3.cpk. In order to know if you are a lucky person, you could do a little Google search about how to mod the game, OR, try it by yourself like this:
1. Extract only the content of ps3.cpk following the instructions in the link I previous share with you
2. Once extracted, place it in another folder. I mean, the ps3.cpk file MUST NOT be inside the USDIR nor any other folder within NPEB02436.
3. The USDIR folder should have this files:
  • EBOOT.BIN
  • ICON0.PNG
  • cache.cpk
  • content.edat
  • data.cpk
  • xrd664.aad
  • ALL THE CONTENT OF ps3.cpk. It could be a bunch of files and folders, or several package files, not sure.
4. At this point you must have only files which size should be less than 4gb.
4.1 Show us the result files and folder structure
5. Start my assistant direct from option 2, the split option
6. Install the resulting PKG as usual and try
