NAND and NOR are two types of flash memory. The older fat ps3's used two NAND chips to store the firmware. Then they started using a single NOR chip and put part of the firmware on the hdd. Now on some of the super slims they use eMMc and that is yet another type of flash memory.

When you make a dump of the NAND, NOR or eMMc you're reading the chip and saving it to a file.
 
And what happend when i dump on Super Slim ?

NAND and NOR are 2 different types of memory chip in the PS3.

Pink1 explained it perfectly, just to add a couple of details that will make you understand it better...
That flash chips (NAND, NOR, eMMC) are soldered in the motherboard
And are the same kind of chips used inside the "USB sticks", most of the chips inside "USB sticks" are a NAND flash type
 
I know i am late to the party, but clarify the different memory types found on each PS3 SKUs

NAND - Found on early PS3 Models (aka Phat), had a capacity of 256Mb in total, divided by 128Mb two chip banks, and stored the PS3 Firmware OS in it, no HDD dependant.

NOR - Found on 2XXX up to 3XXX PS3 Models (aka Slim), had a capacity of 16Mb, and stored partial of the PS3 OS Firmware, relying on the HDD for the rest of the main OS.

eMMC - Found only on 4XXX PS3 Models (aka Super Slim, had a capacity of 16Gb, stored the PS3 Firmware OS in it, and left 12Gb for user storage, no HDD dependant.

(There is some reports that some 4XXX Series uses NOR Memory, instead of the eMMC chip bank, mainly because a 250Gb or 500Gb HDD was present, as i own a 500Gb CECH-4004B, it still has a eMMC 16Gb Chip, and the HDD is Toshiba factory PS3 Compliant, so no PS3 Super Slims, dont have NOR Memory, unless i can be wrong)

I have had a couple super slims. CECH-4001C and CECH-4201C both had NOR chips. I made a youtube video of dumping the NOR Flash with E3 Flasher.

My apologies mate, i quoted the post before about the SS having eMMC and not NOR due to my 500Gb PS3 displaying on the Info Storage In Use : Hard Disk, so i assumed that all SS PS3s have eMMC memory, even the ones with HDD out from the factory, like mine
 
For more accuracy about which flash type is used in every PS3 is better to mention the motherboard model
The problem with that is not well documented how many superslim motherboards exist and which PS3 model was using every superslim motherboard, at least in psdevwiki
With superslims sony started manufacturing different motherboards together at the same time, this never happened before, what they uses to do when the engineers designs a new motherboard is to "update" his factories to only produce one model (and some variations for specific cases like arcade, but arcade are the same motherboard without couple of components)
Additionally... the info about superslim components in internet reported by superslim users was unexistent (thx guys, now you are collecting the fruits of your passivity)
In short... the info in psdeviwiki related with superslims is close to zero... superslim users gave a F%$# about helping documenting them... so if they doesnt cares... nobody cares

emmc flash memory is only found on ps3 superslims 4xxx-A, ie those 12Gb models sold without internal hdd.
All other released superslims use NOR.
