there are a few options under "game settings" on xmb. it is found below system update icon. you have to play any ps2 game one time to get the settings to show up. the settings will be available permanently after that.

Hi. I've checked it. There's no difference using these settings and those available for any jailbroken PS3.
I've tried two games ( World Tour Soccer 2006 and Sensible Soccer 2006).
Both runs smoothly, but I got better results in PCSX 2 ( PC Windows ), due to many settings available. The hard side is to choose the correct ones and have a very good machine.
But this emulator it's the only decent way to play PS2 titles which aren't released for PS3 so far.
I hope something alike, will be possible with a improved built-in emulator on PS3.
