However... Not all apps are compatible with HDDs over 1TB.
Yes, 1TB is enough IMO.
We made some calculations of ~250games in 2008 and the approximate size per game was ~2.36GB in their original non-ripped state, so on a 1TB-Drive ~400 games would fit (still a bit less, than my PS2-Collection, lol.. .). ...but ripping some games like EyeToy Play from 4.38GB to 698MB, certainly helps putting even more games onto an HDD.
Btw.: 1.86TB for your PS3 would be the max. for internal... (external is quite unlimited as it seems, atleast for Homebrew).
You can limit bigger drives to that value via 'HDAT2', however!
Regarding emulators... Well... No app or game should overheat the PS2!
BUT... First off, you should get your set up working (especially Homebrew via FMCB)!
Well, I am currently only using an old 500GB-HDD in a USB3.0-case for some of my PS3-Games and a 4TB-Drive (completely NTFS) works flawlessly in Movian and I ought to remember that it also worked with WebMAN-MOD when I testet it, so no... Bigger drives work via USB, but not internally!
On another note: You can also stream your PS3-games via Network, so essentially a Router with a USB-Connection can serve both... Your PS2 AND your PS3!!!
So you can use one HDD via a Router for both consoles and it is also cheaper!
Edit: Yes, emulators for PS2 exist, but most of them are not optimized, so the PS3 is a better choice for emulation!
The size via LAN is pretty much unlimited and you can serve the NAS (Network- HDD) content to almost every LAN-Capable device!!!
Via UPnP and DLNA you can serve your media-content...
SMB and NFS are supported by many devices as well...
Via PS2's OPL you can stream games from SMB...
The PS3 can access games, if ps3netsrv is running on the router (the Nano-Router I use is capable of doing that).
Your PC/PS3/PS4/XBOX/XBOX360/XBOX ONE/etc. and LAN-connected media-devices or TV can play media-files via LAN.

Why do you want it to be connected to the PS2 directly?
You only need a LAN-Cable between your Router and your PS2 and an HDD connected to the router!
- If you connect it via USB to the PS2, you will experience slowdowns (especially FMV-Stutter/lag) in some games for sure!
- Modding your PS2-Slim for internal HDD-Support will cost more than 100$!
You can access this HDD from multiple devices then and even simultaneously ('at the same time')!
You could have 4 (just an example... Could be 100) PS2's accessing the same game at the same time and it would still perform better than if you connect an HDD to the PS2 via USB!
Trust me... USB is the last way you want to play your games on a PS2!
You only need a freakin' LAN-Cable, connect the PS2 to your Router and then even a USB-Stick can be used for testing-reasons and you can add an HDD later!
You obviously have never really worked with a Network and do not know the benefits of it!
Please believe me, that a proper Network- setup is totally worth the effort + you don't need to spend much cash (you can even spare a lot), because you already have most of the needed stuff (most importantly a Router with USB and a Slim which already has a LAN-Connection)!
Would you mind trying both (USB and LAN/SMB) first please? You can use an old 4GB-Stick for most (one) games, to test it!
You only need to setup the Stick once, because both (USB&LAN/SMB) use the same file-&folder-structure, but for USB the files need to be 100%ly defragmented!!!
Then you can make a better decision based on your own observations!
